Course Description:

The 8-week online Master Food Preserver course is the first segment of the MFP program which is focused on instruction. In this self-paced course, participants receive at least 30 hours of thorough, practical food preservation instruction. All eight course modules contain a pre-quiz, video lessons, resources, a post-quiz, and a discussion board. 

Course Topics:

This course includes eight modules:

  • Module 1 | Introduction: Basics to Preserving Home Canned Foods
  • Module 2 | Pressure Canning and Water Bath Canning
  • Module 3 | Atmospheric Steam Canning for Safely Preserving High Acid Foods
  • Module 4 | Principles of Pickling
  • Module 5 | Jellies, Jams, and Soft Spreads
  • Module 6 | Drying Foods at Home
  • Module 7 | Freezing Fruits and Vegetables at Home
  • Module 8 | Fermentation 

Course Requirements:

The Master Food Preserver volunteer training is divided into two segments: instruction and service. After completing the online course, participants attend a 2-day workshop followed by donating at least 30 educational service hours by the end of August. Both segments are required to receive a certificate of completion and the digital badge. 

Technical Requirements:

To participate fully in this course, you will need:

  • An active email address for the individual participating in the course.
  • A desktop computer or laptop (recommended): Canvas is available on mobile devices, but some content may appear differently.
  • Access to a high-speed internet connection.
  • A web browser compatible with Canvas: Chrome and Firefox are recommended.
  • Headphones or speakers (closed captioning also available).
  • Computer skills including Internet browsing, using email, typing, downloading files, and basic troubleshooting.
